It's as if God knew that unbelieving Man would do everything he could to disprove the resurrection of Jesus from the dead.
Hence He gave us four accounts of it through the eyes of four different characters - Matthew, Mark, Luke & John. We note the variations in their accounts but all are in accord with the astonishing fact - that Jesus had risen from the dead.
In our courts of law, witnesses of the crime are worth their weight in gold - especially when there are a number. So God made sure that we have the personal accounts of many witnesses who saw Jesus, talked with Him, ate with Him - up to 500! That’s very strong proof in any court of law!
One other remarkable feature of Jesus’ appearances is that initially His disciples didn’t believe He had risen - they had to be convinced - like Thomas!
