Why did Paul need to deal with this issue in Galatia?
The reality is that those who believe what is being taught here will eventually become a hypocrite.
A hypocrite is one who does not do what he imposes upon another.
A hypocrite usually binds another morally by something that he is not even willing to do.
Consider what Jesus taught concerning hypocrisy:
2 “So when you give to the poor, do not sound a trumpet before you, as the hypocrites do in the synagogues and in the streets, so that they may be honored by men. Truly I say to you, they have their reward in full.
They display their good deeds.
They pursue the praise of men.
5 “When you pray, you are not to be like the hypocrites; for they love to stand and pray in the synagogues and on the street corners so that they may be seen by men. Truly I say to you, they have their reward in full.
They lust after making their good deeds public.
They will even do the most sacred activities for the praise of men.
16 “Whenever you fast, do not put on a gloomy face as the hypocrites do, for they neglect their appearance so that they will be noticed by men when they are fasting. Truly I say to you, they have their reward in full.
The feign their feelings.
They display their emotions to be noticed by men.
18 But Jesus perceived their malice, and said, “Why are you testing Me, you hypocrites?
They test God.
They have malice in their hearts.
13 “But woe to you, scribes and Pharisees, hypocrites, because you shut off the kingdom of heaven from people; for you do not enter in yourselves, nor do you allow those who are entering to go in.
By their actions they close off the kingdom of God from people.
They do not enter into the kingdom.
15 “Woe to you, scribes and Pharisees, hypocrites, because you travel around on sea and land to make one proselyte; and when he becomes one, you make him twice as much a son of hell as yourselves.
They busy themselves making followers of their poison.
Typically, disciples of hypocrites are worse than the teacher hypocrite.
23 “Woe to you, scribes and Pharisees, hypocrites! For you tithe mint and dill and cummin, and have neglected the weightier provisions of the law: justice and mercy and faithfulness; but these are the things you should have done without neglecting the others.
They concentrate on the outward or mundane aspects of religion.
They are darkened towards the heavier provisions aspects of God’s Law, those things closest to God’s nature.
25 “Woe to you, scribes and Pharisees, hypocrites! For you clean the outside of the cup and of the dish, but inside they are full of robbery and self-indulgence.
They practice cleaning up how they appear to the people around them.
However, their insides are motivated by theft and gluttony (self-motivated).
27 “Woe to you, scribes and Pharisees, hypocrites! For you are like whitewashed tombs which on the outside appear beautiful, but inside they are full of dead men’s bones and all uncleanness.
Their outward behavior makes the most use of a beautiful appearance.
But, their insides are rotten.

For they do not wash their hands when they eat bread.” 3 And He answered and said to them, “Why do you yourselves transgress the commandment of God for the sake of your tradition? 4 “For God said, ‘Honor your father and mother,’ and, ‘He who speaks evil of father or mother is to be put to death.’ 5 “But you say, ‘Whoever says to his father or mother, “Whatever I have that would help you has been given to God,” 6 he is not to honor his father or his mother.’ And by this you invalidated the word of God for the sake of your tradition. 7 “You hypocrites, rightly did Isaiah prophesy of you: 8 ‘This people honors Me with their lips, But their heart is far away from Me. 9 ‘But in vain do they worship Me, Teaching as doctrines the precepts of men.’ ” 10 After Jesus called the crowd to Him, He said to them, “Hear and understand. 11 “It is not what enters into the mouth that defiles the man, but what proceeds out of the mouth, this defiles the man.” 12 Then the disciples came and said to Him, “Do You know that the Pharisees were offended when they heard this statement?” 13 But He answered and said, “Every plant which My heavenly Father did not plant shall be uprooted. 14 “Let them alone; they are blind guides of the blind. And if a blind man guides a blind man, both will fall into a pit.”

The traditions of the elders = law for Israel/structure of Israel’s worship.
They do not wash their hands.
Jesus probably taught them that.
18 John’s disciples and the Pharisees were fasting; and they came and said to Him, “Why do John’s disciples and the disciples of the Pharisees fast, but Your disciples do not fast?” 19 And Jesus said to them, “While the bridegroom is with them, the attendants of the bridegroom cannot fast, can they? So long as they have the bridegroom with them, they cannot fast.

They were willing to disregard God’s Law for their own expression of righteousness.
The truth is, however, that expression of righteousness is actually a rot to God and worthy of God’s judgment.
A religious teaching/perspective that causes a man or woman to disregard God is a condition that makes one a hypocrite.
The definition of a hypocrite is given here in clarity:
13 Then the Lord said, “Because this people draw near with their words And honor Me with their lip service, But they remove their hearts far from Me, And their reverence for Me consists of tradition learned by rote,
14 Therefore behold, I will once again deal marvelously with this people, wondrously marvelous; And the wisdom of their wise men will perish, And the discernment of their discerning men will be concealed.”
15 Woe to those who deeply hide their plans from the Lord, And whose deeds are done in a dark place, And they say, “Who sees us?” or “Who knows us?” 16 You turn things around! Shall the potter be considered as equal with the clay, That what is made would say to its maker, “He did not make me”; Or what is formed say to him who formed it, “He has no understanding”?
Pharisees and scribes = teachers of the Law.
The interaction here displays all the qualities of a hypocrite.
Outward acceptance of man.
Outward display of emotions.
Outward display of religion.
Outward display of beauty.
13 For those who are circumcised do not even keep the Law themselves, but they desire to have you circumcised so that they may boast in your flesh.
In obedience to the teaching of Jesus Christ Paul warned the Galatians to beware of hypocrites.
8 But Jesus, aware of this, said, “You men of little faith, why do you discuss among yourselves that you have no bread? 9 “Do you not yet understand or remember the five loaves of the five thousand, and how many baskets full you picked up? 10 “Or the seven loaves of the four thousand, and how many large baskets full you picked up? 11 “How is it that you do not understand that I did not speak to you concerning bread? But beware of the leaven of the Pharisees and Sadducees.” 12 Then they understood that He did not say to beware of the leaven of bread, but of the teaching of the Pharisees and Sadducees.
1 Under these circumstances, after so many thousands of people had gathered together that they were stepping on one another, He began saying to His disciples first of all, “Beware of the leaven of the Pharisees, which is hypocrisy.

If they cannot, or do not, keep the Law themselves, why are they burdening the disciples to do it?

The Jews themselves have failed to keep the law (Rom. 2:21): why then try to involve Gentiles in the same failure by persuading them to accept the rite that binds to the law (Acts 15:10)?
21 you, therefore, who teach another, do you not teach yourself? You who preach that one shall not steal, do you steal?
10 “Now therefore why do you put God to the test by placing upon the neck of the disciples a yoke which neither our fathers nor we have been able to bear?
They are the “legalists” of Jesus’ day.
24 “You blind guides, who strain out a gnat and swallow a camel!
They cannot do what they tell others.
They also run amok in their own lives/hearts of permissive living.
Imposing laws that they themselves cannot keep is the heart of a legalist.
